White Chocolate & Passionfruit Cheesecake

While this cheesecake is made from basic traditional ingredients there are two special additions that give this particular cake its distinct taste- passionfruit and white chocolate! The soft creamy cheesecake batter is mixed with luscious melted white chocolate and juice of passionfruit pulp which is then poured into the buttery biscuit crust base. Once the cake is baked to light-golden perfection, let it rest in the fridge overnight. It is absolutely delicious!

Ingredients: unsalted butter, digestive biscuits, white chocolate, half & half cream, cream cheese, mascarpone cheese, golden caster sugar, vanilla extract, eggs, passion fruit pulp.

For this recipe you would need approximately 15-17 passion fruits.

Cut the fruit in half and scoop out the pulp onto the  sieve.

Press hard on solids to extract as much juice as possible.

Put the crushed biscuits and melted butter into a bowl and mix well. Tip the mixture into the prepared tin and press down with the back of a spoon. Bake in the oven for 10 minutes, or until golden. Leave to cool. Reduce the oven temperature to 300 F (150 C).

Put the chocolate into a heatproof bowl. Put the cream into a small saucepan and heat, then pour onto the chocolate and stir until smooth. Put to one side.

In a separate bowl, mix the cream cheese and mascarpone together until smooth.

Add the sugar, vanilla and egg yolks.

Stir in the white chocolate mixture.

Add passion fruit pulp.

In a large, clean, dry bowl, whisk the egg whites to soft peaks.

Fold a large spoon of the egg whites into the batter very vigorously.

Then gently fold in the remaining whites until smooth.

Spoon the mixture onto the cooled base and bake in the oven for 50-60 minutes, or until set but with a slight wobble in the center. Turn off the oven and leave the cheesecake to cool inside for 2 hours, with the door ajar. Chill in the refrigerator overnight.

To serve, remove from the tin and decorate with fresh passion fruit

  • 2 oz. (50 g) unsalted butter, melted, plus extra for greasing
  • 3½ oz. (100 g) digestive biscuits, crushed
  • 4 oz. (125 g) white chocolate, chopped or medallions
  • 4 fl. oz. (125 ml) half & half cream
  • 7½ oz. (225 g) cream cheese, softened
  • 7½ oz. (225 g) mascarpone cheese, softened
  • 4 tablespoons golden caster sugar
  • 2 teaspoons vanilla extract
  • 3 medium free-range eggs, separated
  • 4 fl. oz. (125 ml) passion fruit pulp, sieved to remove pips
  • Passion fruit, to decorate

Directions

  1. Preheat the oven to 350 F (180 C). Grease 8-in. (20 cm) diameter springform cake tin.

  1. What a great idea for cheesecake!!!Sounds quite different. Never tried cheesecake with passion fruit!!Will definitely make it on a weekend!
