Spicy Pork Sausage & Country Bread Stuffing

Stuffing has always been one of the foods I look forward to having on Thanksgiving. What could be better than that moist concoction of flavors, textures, spices and ingredients which are limited only by your imagination? Another plus is that most of us have it only once a year. This year I used a recipe that combines spicy pork sausage country bread stuffing with finely diced vegetables, drippings from cooked sausage, stock and eggs. You’ll get a kick from spicy sausage meat and hearty bite from small cubes of moistened country bread that will delight your palate. No need to waste any bread crust, you can use it to further enhance the texture by adding yet additional element of hardness to the mixture. If buying bread in your local food store, ask them to slice it into thin strips then simply cut the strips into cubes before baking them. Purple onions, carrots and celery will surely add not just flavor but also interesting nice color to an otherwise boring-looking dish. Sprinkle stuffing generously with finely chopped parsley for some additional colorful accent on top. Ingredients: country bread, hot pork sausages, purple onion, carrots, celery stalks, garlic cloves, flat-leaf parsley, low-sodium chicken stock, unsalted butter, eggs, sea salt, freshly ground black pepper, olive oil.

Preheat oven to 350 degrees. Spread bread cubes on a baking sheet and bake until crisped, about 10 minutes.

Melt 2 tablespoons of butter in a large straight-sided skillet over medium heat and sauté the sausage meat, breaking it down into pieces with a wooden spoon, until cooked through, about 10 minutes. Transfer into a large bowl with the drippings.

Chop onion finely.

Add another tablespoon of butter to the skillet, add onions and sauté for 3-4 minutes until translucent but not browned. Add minced garlic; cook for 1 more minute.

Transfer onion-garlic mixture to the meat.

Finely dice carrot and celery.

Melt the last tablespoon of butter in the skillet and sauté carrot and celery until softened and just beginning to color, about 5 minutes.

Season with salt and pepper, transfer to the meat.

Add bread cubes and toss everything well.

Pour stock over the mixture, add eggs, parsley, season with salt and pepper and toss to combine. Kitchen tip: Check for seasoning by making a small patty and frying it in the pan, taste and adjust if needed.

Butter the baking dish lightly.

Transfer the stuffing into a buttered baking dish. Drizzle with olive oil and bake for 35-40 minutes until starting to brown on top. Serve with turkey!

  • ½ loaf country bread, cut into ½ inch cubes (about 6-7 cups)
  • 4 (l ½ lb.) hot pork sausages, removed from casings
  • 1 purple onion, finely diced
  • 2 medium carrots, finely diced
  • 3 celery stalks, finely diced
  • 2 garlic cloves, minced
  • ¾ cup flat-leaf parsley, finely chopped
  • 1½ cups low-sodium chicken stock
  • 4 tablespoons unsalted butter, divided
  • 2 eggs, lightly beaten
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • Olive oil

  • 13 x 9 x 2 inches rectangular baking dish

Directions
