Seafood Sliders with Butter Lettuce & Tomato Slice

Sliders are another excellent way to feed the crowd and who doesn’t like mini-burgers anyway? Mine are  seafood burgers made from a combination of shrimp, scallops and squid all mixed in the food processor for some seriously delectable treat. Serve them with a slice of tomato & lettuce and some spicy condiment on a tiny challah bun and watch even your most mannered, sophisticated guests lick their fingers with delight!

Ingredients: shrimp, scallops, calamari, corn, egg yolk, bread crumbs, parsley, garlic cloves, red pepper fakes, challah buns, butter lettuce, red vein tomatoes, mayonnaise, vegetable oil, salt and freshly ground black pepper.

To make patties: Chop garlic and parsley. Cut shrimp in three pieces, cut scallops in half and squid into rings.

In a food processor, whiz seafood, parsley, garlic, salt and pepper, until combined but not mushy.

Transfer to a bowl.

Add corn, yolk, bread crumbs and red pepper flakes, mix with your hands to combine.

Preheat the oven 375 F. Line a large baking sheet with parchment paper. Make small 2-inch patties.

Heat some oil in a non-stick frying pan and sear the patties in oil on medium heat for 1-2 minutes on both sides, until golden.

Transfer to a baking sheet. Bake for 8-10 minutes right before the sliders are ready to be assembled and served.

Cut challah buns in half and toast them slightly in the non-stick frying pan for 1-2 minutes. Set aside.

Cut the lettuce into small pieces to fit the buns. Using a thin sharp knife, slice the tomatoes into 1/8-inch pieces. Set aside.

To assemble, line the bottom halves of the buns on the board or serving platter, top with lettuce leaf and a slice of tomato, season slightly with salt and pepper.

Place the seafood patty on top. Smear a tiny little bit of mayonnaise on the cover bun and place it on top. Secure the slider with a tooth pick above.

  • ½ pound shrimp, peeled, deveined
  • ½ pound scallops
  • 10 calamari, thoroughly washed
  • ½ cup corn, boiled
  • 1 egg yolk
  • ¾-½ cup bread crumbs
  • 2 tablespoons parsley, chopped
  • 2 garlic cloves, chopped
  • ¼ teaspoon red pepper fakes
  • Vegetable oil
  • Salt and freshly ground black pepper 

To garnish

  • 16 challah buns, cut in half lengthwise
  • Butter lettuce
  • 3-4 medium red vein tomatoes
  • ¼ cup mayonnaise
