Pecorino Cheese with Sweet Rhubarb Sauce

This nearly effortless recipe calls for only three ingredients — rhubarb stalks, sugar and water. The sweet and sour rhubarb sauce works perfectly with the rich salty flavors of the all-time Italian staple — Pecorino — a hard sheep’s milk cheese hailing from Tuscany. Break the cheese into bite size pieces and serve alongside the sauce.

I discovered this recipe in the May 2013 issue of Tastes of Italia magazine and was excited to try it for the first time. It was a show stopper when I served it with crispy toasted bread and cheese, accompanied by sparkling white wine from Spain’s Basque region, Getariako Txakolina (pronounced Chac-o-leena). This is an easy drinking wine with bright citrus flavor made to be consumed young.

I was a bit apprehensive about making this sauce at first, since I’ve never tasted rhubarb, let along cooked it. But it turned out to be such an easy recipe. The original recipe contained red radishes which I respectfully skipped. The sauce can also be used with salmon or even lamb cutlets.

Pecorino Cheese with Sweet Rhubarb Sauce

Serves 6

Ingredients

 

  • 1 pound rhubarb stalks, trimmed and cut into 1-inch pieces
  • 2 large pieces of lemon peel, each 1 x 3 inches
  • ½ cup sugar
  • ½ cup water
  • ½ cup diced red radishes
  • Pecorino cheese, sliced
  • Small pieces of crispy bread

Directions

    Combine all ingredients (except the cheese and bread) in a large skillet. Bring to a boil, lower the heat to achieve a steady simmer. Cook uncovered stirring frequently until the rhubarb is tender, about 20 minutes. Remove the zest pieces. May be served warm or cold but the cheese must be at room temperature.
