Menu: An Elegant Weeknight Soirée
Recently I threw a weeknight soirée for some close friends. For the hors d’oeuvres I served Crispy Bruschetta with Artichoke Bean Spread. It has a smooth, fluffy texture and an unexpected kick of understated smokiness. Garnish it with parsley leaf and some lemon zest to brighten up the flavor.
On a cheese board, serve bite size pieces of the rich and salty-Pecorino Cheese along with crispy bread complimented by Sweet and sour Rhubarb Sauce.
Potato Crisp, Fennel & Prawn Salad will make an irresistible starter at your next soirée. Paper-thin slices of fresh anise-flavored fennel, crisp golden potatoes chips, and sweet shrimp assembled into exciting layers of interesting flavors and different textures. Place the moist flaky cod fillets into each bowl and pour delicious broth with vegetables around it.
