Farmer Cheese Pancakes with Raisins

On a typical Saturday or Sunday morning you may find me making these delicious farmer cheese pancakes. They're the ultimate sweet fix on a weekend breakfast or brunch. I bet you never knew you could make pancakes out of farmer's cheese but it is a very popular recipe from Eastern European cuisine. There is no particular trick in making these pancakes but I do like when they are uniform in size and appearance, therefore, I use a small ice cream scooper for the right portion and a fresh not scratched non-stick frying pan. Raisins add a nice touch of sweetness and chia seeds unexpected crunch, serve them with fresh berries. I make mine with very little sugar because I love to use maple syrup for flavor and to keep them moist. Moreover, it feels almost artistic to slowly pour the syrup on top of the pancakes and watch it take a shape. Serve them with earl grey tea or freshly brewed coffee. If you feel adventurous and chic try them with a good rose Champagne!

Ingredients: farmer's cheese, egg, flour, sugar, raisins, chia seeds, lemon, orange, berries, mint, maple syrup, vegetable oil.

Make the pancakes: Place farmer cheese into a large bowl.

Add an egg and zest a lemon.

Add flour.

Add sugar. My version is semi-sweet because I like to pour enough maple syrup to keep them moist but if you are on a sweet side, add another tablespoon or two of caster sugar.

Add chia seeds. This ingredient is totally optional, but I love how it adds crunch and health benefits to my pancakes.

Add a little water to raisins and microwave for 30 seconds until raisins are plum. Get rid of liquid.

Mix to combine.

Scoop up pancake mixture with a small ice-cream scooper or with your hands; put it on a plate with flour.

Sprinkle little bit of flour on top.

Press down to form ½”-inch thick pancake.

Shake off extra flour from your pancake by throwing it from one palm to another.

Even it out slightly.

Shape it on the sides if needed.

Place your pancake on a clean platter lightly dusted with flour. Continue to make the desired quantity of pancakes and place them on the platter.

Put a large non-stick frying pan on medium heat, drizzle lightly with oil. When the oil is nice and hot, add your pancakes and cook for about 2-3 minutes on each side or until golden – you may need to cook them in two or even three batches.

Cut berries in half.

Scatter them sporadically over the pancakes.

Zest some orange on top.

Drizzle generously with maple syrup. Add few tiny mint leaves on top.  Serve!

For the cakes
  • 1 lb. farmer’s cheese
  • 1 egg
  • 2 tablespoons flour, plus more for drenching
  • 2-3 tablespoons sugar
  • 2 tablespoons raisins, soaked
  • 1 tablespoon chia seeds
  • 1 lemon, zested
  • vegetable oil for cooking
Garnishing options
  • Fresh berries
  • Maple syrup
  • Lemon/or orange zest
  • Mint leaves

Directions

  1. Make the pancakes: Place farmer cheese into a large bowl; add egg and the rest of ingredients. Mix to combine. Take a different clean plate and dust it lightly with flour.
  2. Scoop up pancake mixture with a small ice-cream scooper or with your hands; put it on a plate with flour. Sprinkle little bit of flour on top, press down to form ½”-inch thick pancake. Shake of extra flour and place your pancake on cutting board lightly dusted with flour. Continue to make the desired quantity of pancakes and place them on the cutting board.
  3. Put a large non-stick frying pan on medium heat, drizzle lightly with oil. When the oil is nice and hot, add your pancakes and cook for about 2-3 minutes on each side or until golden – you may need to cook them in two or even three batches. Serve straight away, with orange zest, fresh berries, mint and maple syrup.
